2 ingredient spice muffins – my kids love!
Yes, you read right. TWO INGREDIENTS. My friend Summer is a mom to three boys and always has snacks on hand. The other day at the park she introduced me to an amazing mini muffin. I had to share!
2 ingredient Spice Mini muffins
You need:

Box of spiced cake mix
can of pumpkin
Directions: mix the cake mix and the can of pumpkin together.

It will be a bit tough (thick) to mix up, but just make sure all of the cake mix is broken up.

Now all you do is put the batter in the mini muffin cups and bake! 350 degrees for about 14 minutes.
And, for what it’s worth, I’m not a HUGE fan of pumpkin and I love these! They are more like spice cake tasting – or gingerbread.
They are the perfect size to give to my baby – she loves them!
My mom did the math (serious math) and calculated that each mini muffin is about 20 calories. She is no expert but she knows her stuff!
